The Story of Grandma Josephine Corbi
Josephine Corbi was born on December 25, 1911. Grandma was two years old when her family came to Ellis Island in 1913 and later moved to Baltimore. Grandma watched her mother and grandmother in the kitchen on a daily basis where she learned, practiced and began cooking her favorite things; homemade pasta, one-dish meals and cookies made from "scratch."
It was during this "hands on" teaching that Grandma said she learned, "The secret to good cookies is knowing how to mix the right ingredients in order to make the best cookies. If you want to be a good cook, you have to work hard at it!"
Over her lifetime, Grandma has made thousands of pounds of cookies. Everyone who came into the Corbi home was welcomed with hospitality and delicious food. She would make specialty cookies for the kids while tailoring other cookies for the adults.
Due to their incredible taste, Grandma has said she had to hide her cookies to keep them around for a while.
Family recipes have been passed down for three generations, dating back to the 1800's. In fact, Grandma helped her son, Joe Corbi, develop his special pizza sauce recipe. Grandma's mother and grandmother taught her all the family secrets of cooking. Now Grandma's recipes have been passed on for everyone to enjoy!
